The Goats Cheese Challenge Part 1 – Capricorn Cheese

We tried 3 of the recipes using Goats Cheese that I was sent by The Lubborn Creamery in Somerset. I told a few friends and here were their suggestions.

Ethel’s Goats Cheese, Blueberry and Avocado Superfood Salad

1. Make a Goats Cheese Quiche

2. Eat it solo (to get the real flavour) or have it with salad

3. Combine it with figs

4. Use as a substitute for Pecorino on Pasta (I know) Tried it, and it works really well for a creamier taste over pappardelle

5. Make Crepes

6. Make Goats Cheese and Black Olive Muffins

I have to be honest, I’d used a fair bit on toast, oatcakes, crackers or eating it solo. What can I say, it is good.  So far, I’ve made the Blueberry Goats Cheese Salad as it was v. quick. Delicious. Blueberries and Goats cheese are a great combination.  Here is the recipe:

1 x 100g Goats Cheese

50g blueberries

1/2 avocado diced

Good handful of mixed salad leaves ( I used Rocket and Spinach)

Lemon oil or Olive oil

Sea Salt (optional I think better without)

Freshly ground black pepper

1. Slice the goats cheese and put half on each plate

2. Add half blueberries, avocado and green leaves to each plate

3. Season with (salt – if you really have to) pepper, drizzle over lemon/olive oil

4. Eat well
